Cooling Cucumber Raita

Cooling cucumber raita is a fresh yogurt and cucumber side, gently spiced, traditionally served to calm the heat of summer meals in Ayurveda.

Ingredients

  • 1/2 cucumber, peeled and grated
  • 1/2 cup plain yogurt
  • 2 tbsp water
  • 1 small pinch ground cumin, lightly toasted
  • 1 small pinch rock salt
  • Fresh mint leaves, finely chopped
  • Fresh coriander leaves, finely chopped

Method

  1. Peel and grate the cucumber, then gently press out any extra water.
  2. Whisk the yogurt with the water until smooth and light.
  3. Toast the cumin in a dry pan for a few seconds, then add it to the yogurt.
  4. Fold in the grated cucumber.
  5. Stir in the rock salt, chopped mint and coriander.
  6. Chill briefly and serve cool alongside the main meal.

Cooling and best in warm weather to balance Pitta. Keep the mint and cucumber fresh rather than letting it sit too long.
