Ginger Tea

Ginger tea is fresh ginger root simmered into a warming infusion, traditionally sipped before meals to kindle agni, the digestive fire.

Ingredients

  • 1 inch fresh ginger, thinly sliced
  • 3 cups water
  • 1 small pinch ground cinnamon
  • 1 tsp honey, to taste
  • Squeeze of fresh lemon, optional

Method

  1. Peel and thinly slice the fresh ginger.
  2. Bring the water to a boil in a small pot.
  3. Add the ginger and cinnamon, then lower the heat.
  4. Simmer gently for seven to eight minutes until the water is fragrant and lightly golden.
  5. Strain the tea into a cup and let it cool for a minute.
  6. Stir in honey and a squeeze of lemon if you like, and sip it warm.

Warming and best in cooler weather or before a heavy meal. Pitta types should keep it mild and infrequent.
