Takra

Takra is spiced buttermilk thinned with water, the traditional Ayurvedic after-meal drink, classically taken to settle and lighten digestion.

Ingredients

  • 1/2 cup plain yogurt
  • 1 cup water
  • 1/2 tsp cumin seeds, lightly toasted and ground
  • 1 small pinch rock salt
  • 1 pinch ground black pepper
  • Fresh coriander leaves, finely chopped

Method

  1. Whisk the yogurt with the water until smooth and frothy. Thinning it well is what makes it takra rather than plain yogurt.
  2. Toast the cumin seeds in a dry pan until fragrant, then grind them.
  3. Stir the ground cumin into the buttermilk.
  4. Add the rock salt and black pepper.
  5. Mix in the chopped coriander.
  6. Serve at room temperature in small cups after lunch.

Always diluted with water and taken in small amounts after the midday meal. A classic digestive in the Ayurvedic kitchen.
